Easy Grass-Fed Beef With Mixed Vegetables

One of my most favorite things to do is to cook in my kitchen.  There is something about preparing a delicious meal for my family and friends.  But sometimes, especially after a long day at work, I just want to make something that is quick, easy AND delicious.  And if it can be reheated the next day for lunch or combined with eggs for breakfast….well that is a double win!

This recipe can be prepared in no time!  I really love the grass-fed beef from Aldi.  I just put it in the pan and turn on the heat.

Then just add any kind of chopped veggies.  Today, I used chopped red cabbage (full of bioflavonoids), organic baby bell peppers and asparagus.

I often times think that less is more so I like to keep my seasonings simple.  I love garlic salt and pepper.  The Simply Organic brand of garlic salt is made with sea salt and not refined salt.  I also added some crushed red pepper flakes and some grass-fed butter.

Then just let it simmer and Wa-La!  It’s done!  And as I mentioned, it can be heated for lunch the next day or you can even add some delicious cage-free, pastured eggs to make a delicious scramble the next morning!  Enjoy!!
