Fresh & Easy Cucumber & Tomato Summer Salad
If you know me, you know that I love a delicious homemade salad! Today when I was at the grocery store, I came across some beautiful organic tomatoes and I thought that a tomato and cucumber salad would be a nice change from our very frequent spring green salads. This salad can be made ahead of time…..I made mine at 11:00 am and I am going to serve it with our dinner tonight. You can even make it in the evening and let it all marinade together in your refrigerator overnight. It would make a delicious salad to bring to a Memorial Day party or to serve on a warm summer afternoon or evening when you are grilling! And if you have your own garden and are able to grow these delicious vegetables…..well, that is an added bonus!
This recipe is so simple because you really don’t have to measure anything. I am all about quick and easy. Let me know if you give this recipe a try! Enjoy!
