Fresh & Easy Cucumber & Tomato Summer Salad

If you know me, you know that I love a delicious homemade salad!  Today when I was at the grocery store, I came across some beautiful organic tomatoes and I thought that a tomato and cucumber salad would be a nice change from our very frequent spring green salads.This salad can be made ahead of time…..I made mine at 11:00 am and I am going to serve it with our dinner tonight.  You can even make it in the evening and let it all marinade together in your refrigerator overnight.  It would make a delicious salad to bring to a Memorial Day party or to serve on a warm summer afternoon or evening when you are grilling!  And if you have your own garden and are able to grow these delicious vegetables…..well, that is an added bonus!

This recipe is so simple because you really don’t have to measure anything.  I am all about quick and easy.  Let me know if you give this recipe a try!  Enjoy!

Fresh & Easy Cucumber & Tomato Salad

Course Salad, Side Dish


  • 4 stalks organic celery chopped
  • 3 mini organic cucumbers sliced
  • 1 1/2 lbs organic tomatoes, multi-color and vine ripe sliced
  • 6 oz feta cheese diced
  • organic garlic salt to taste
  • organic black pepper to taste
  • olive oil to taste
  • red wine vinegar to taste splash


  1. In a large bowl combine celery, cucumbers, tomatoes and feta cheese.

  2. Season with garlic salt and pepper.

  3. Generously, pour olive oil over your salad.

  4. Add a splash of the red wine vinegar.

  5. Toss to combine. Serve or store in refrigerator to marinate for a few hours or even overnight.
